it’s easy to cook good fried rice.the simplest way is fried some minced garlic til it’s golden brown in the wok,put the rice into it and other ingredient, eggs and most importantly, season the rice with a dash or more if u like it a little saltish (dark soy sauce.)stir n fry til iy’s golden brown and when the aroma of the rice is fragrance,it’s ready to be serve.

Making good fried rice and orange chicken isn’t about the recipe, it’s about the cooking technique and the cooking equipment.

Good Chinese food is very challenging for the home cook (even an expert one). It takes a high quality well-seasoned seasoned wok, a very powerful burner (hotter than most home stoves go), and excellent wok techniques.

I’m a very good cook, but I just don’t try to do good Chinese at home. It’s just not gonna happen.

Use day old rice for best results.

The orange chicken is an Americanized version, so I dislike it so no help there.

Fried rice is whatever you like. Cook and/or stir fry your meats, (fish, beef, chicken, ham, shrimp only towards the end), using good fried garlic and olive oil. Put in any veggies you want or don’t want, pour in your cooked rice, (use a good Jasmine rice, not Uncle Bens), then pour in sweet soy sauce, (it is thick and sweet), until it comes to the color you like. Remove from heat. Now you can stir in cracked peanuts, bean sprouts or water chestnuts if you like them crunchy.

Fried rice is like stir fry, use whatever you feel like at the time. No real recipe, just the basics.

My ex-wife is Thai and my actual recipe will probably be way too hot for you.

try my hibachi rice rec…its very standard and SOeasy to make.
    you will need some
    2 cups cooked white rice..cooled
    sesame oil 3 tbsp.
    soy sauce 1/4c
    1 large egg
    1 tbsp. garlic
    1 tbsp. fresh ginger
    1 cup of frozen peas
    1tsp. peanut or olive oil
IN a hot skillet add oil add garlic and ginger (do not allow to burn) add egg and scramble cook throughly. Add peas and sauces mix throughly and finally add rice.. Adjust seasonings accordingly with soy sauce and sesame oil. THAT;S IT. THE LONGER YOU COOK IT THE NUTTIER IT TASTES.
